1    16 ounce can Tomatoes, finely chopped, with their juice<br />
½   cup Raisins<br />
1½  cups Vegetable stock (water w/ added broth powder after boiling is also acceptable)<br />
½   teaspoon Salt<br />
1    cup Couscous<br />

<p>Step 1:  Heat oil (or water) over medium high heat in a large skillet.<br />
Step 2:  Throw in Garlic &amp; Onion, sauté for 2 minutes.<br />
Step 3:  Sprinkle Cumin, Turmeric, Paprika, &amp; Cayenne, cook for another 2 minutes, stirring often.<br />
Step 4:  Add Zucchini, Chick Peas, Tomatoes, &amp; Raisins, stir thoroughly.  Cover pan, lower to medium heat.<br />
Step 5:  Cook, occasionally stirring, till Zucchini feels tender (approximately 15 minutes).  Sprinkle some salt          or pepper to your particular taste(not the salt from above ingredients, that will be used for Couscous).</p>
<p>*While cooking Vegetables, prepare the Couscous*</p>
<p>Step 6:  Bring Vegetable Stock (or water) to a rapid boil.<br />
Step 7:  Stir in Salt and Couscous.  Cover and remove from heat.  Let it set for 5 minutes, or possibly up to 20 minutes.<br />

<h2>Vegan Recipes &#8211; White Pizza Ingrediants</h2>
<p>Servings 4-6</p>
<p>Lets start with the Crust:<br />
1 tablespoon of dry yeast<br />
1 cup of warm water<br />
1 tablespoon of olive oil<br />
3 cups of white flour, preferably unbleached<br />
1/2 teaspoon of sugar<br />
1/2 teaspoon of salt<br />
1 teaspoon of oregano<br />
1/2 teaspoon of basil</p>
<p>Pan preparation:<br />
even coating of olive oil spray<br />
some light sprinkling of corn meal</p>
<p>Lets makka da Sauce:<br />
1 chopped garlic clove<br />
2 tablespoons of flour<br />
1 cup of soy milk (not chocolate) : )<br />
1 tablespoon of margarine<br />
and maybe a little salt and cayenne pepper</p>
<p>Toppings:<br />
chopped onion (this is up to you but I prefer about half of a cup)<br />
1 maybe 2 chopped garlic cloves<br />
chopped bell pepper (I use about a 1/3 cup)<br />
1 can of chopped artichoke hearts<br />
8 to 10 sliced mushrooms<br />
light coating of olive oil spray<br />
Some like it a little saltier than I, so you might add salt<br />
I use soy Parmesan for my pizza but its up to you on this one (optional)</p>
<p style="text-align: justify;">Crust: Put the sugar, yeast, water in the food processor, preferably with a dough blade. Mix then let sit for 5 min. Insert the rest of the ingredients and process for 3 min, dough should cling to the side of the processor. Place into a bowl with lightly sprayed olive oil, place into a warm oven until doubled in size. While the dough rises, start on the sauce and begin dicing your veggies. With the dough doubled, beat it down and spray your stone or pizza pan or cookie sheet with olive oil and a dash of corn meal until coated. Stretch your dough to the desired size. Place it back in a warm oven til sauce is made and the toppings are ready.</p>
<h3>Vegan Recipes &#8211; Start your engines! &#8211; Preheat oven to 375.</h3>
<p style="text-align: justify;">To start the Sauce: Melt margarine in a saucepan on stove over medium heat. Add garlic and stir for 1 min; best to not brown. Stir flour until you make a thick paste and cook, stirring briskly, for 1 min. Pour the soy milk in slowly, stir to avoid the lumps. If you come up with lumps, kill them with a blender. Cook and stir for a few minutes until it thickens. Here you can experiment and add things like Italian seasoning, cayenne, salt, pepper, garlic, paisley, etc.</p>
<p style="text-align: justify;">Let&#8217;s put is all together now. Pour your sauce onto the crust and spread it nice and evenly until smooth. (Note: Gravity will  spread sauce and toppings in the oven so save a bit of room for the crust.) (If you have a lot of crust left just put honey on it for dessert) : ) Now Spread those toppings until it starts looking like a pizza. Spray with olive oil (brush on or pour if you don&#8217;t have spray). Bake at 375 for about 20 minutes.  Cut into pieces and enjoy your accomplishment. <h3>Process for Vegan Recipes: Roasted Eggplant Curry</h3>
<p>Process:<br />
Step 1: Roast Eggplants on a charcoal grill (preferable), or roast them in an oven at 400 degrees until Eggplant has a brown outside and soft inside.  After it has cooled, you will then peel it.<br />
Step 2: Sauté Onions in water until they are translucent.  Then you will add Garlic &amp; Mustard Seed. Continue to cook until onions turn a golden color.  Add Turmeric, Cayenne &amp; Curry, stir.<br />
Step 3: Place pulp of Eggplant &amp; Onion mixture into a food processor and blend.  Add tomatoes till mixture is thick and reddish-brown (Adding too much Tomato can cause it to be a little too sweet).<br />
Serve: Add Salt &amp; Pepper and Serve over steamed brown rice for a delicious <b>vegan recipes</b> meal.</p>

<h2>Vegan Recipes &#8211; Ingrediants</h2>
<p>2 1/2 tsp of paprika (preferably sweet)<br />
6 minced garlic cloves<br />
15 fresh minced parsley sprigs (flat leaf)<br />
2 diced small potatoes<br />
2 cups of broth (vegetable)<br />
3 diced and peeled carrots<br />
2 diced and peeled zucchinis (about 1/2 pound)<br />
1 diced small onion<br />
1 medium peeled and diced eggplant globe<br />
8 ounces of green beans<br />
10-ounce package frozen baby lima beans (or you can use fava beans)<br />
freshly ground black pepper<br />
1/4 tsp cayenne<br />
minced fresh flat-leaf parsley used for garnish</p>
<h3>Vegan Recipes &#8211; Let&#8217;s get started!</h3>
<p style="text-align: justify;">Use large saucepan over medium to high heat, (dry)fry onion, stirring consistently, until slightly browned, about 5 minutes.  Add paprika, 3/4th of the garlic, parsley, and 1 tbs water.  Stir well.  Add the broth,carrots and potatoes. Cover with a lid and cook til the carrots lose their crispness, around 8 to 10 min.</p>
<p style="text-align: justify;">Reduce the heat to medium and add the eggplant, zucchini, and both beans. Cook and cover till the vegetables are soft, around 25 to 30 min.  Season with pepper, and cayenne.  Sprinkle the parsley and minced garlic and serve immediately.</p>

Have you ever wondered where the term came from or what it means?  Many people are confused on exactly what <b>vegan foods</b> are available and how nice it can be to have a healthy vegan lifestyle.  You first need to learn the food groups that are permitted for a vegans to eat as it will be important to know that there are food groups that should not be avoided; you will be eating many fruits and vegetables.  When on a vegan diet the fruits and vegetables will by far be the most common <i>vegan foods</i> that you will eat, they will play a big roll in making sure that you get all of the required nutrients.</p>
<h2>Vegan Foods &#8211; Types of foods</h2>

The first and most well known is a standard vegetarian.  People in this category will not eat any dairy products, fish, poultry, or meats.  Too many this is an overly strict eating habit so to lighten it up a bit there is what we call lacto-ovo vegetarians.  These types of vegetarians will eat things like dairy products and eggs but will still not any meat in their diet.  An ovo vegetarian will eat eggs but no dairy products and a lacto vegetarian will only consume dairy products.  Then you have a Vegan who will not consume any sort of animal products nor will they use any animal related products such as leather coats.</p>
<p style="text-align: justify;">Vegans don&#8217;t even eat foods such as honey because it is made by bees, gelatin is also avoided as it is made from meat byproducts and there are also many types of clothes which they won&#8217;t wear due to being from an animal product like wool, leather silk just to name a few but there are many more.  We could go on forever but will save that list for another day.  Other foods that need to be avoided which many not realize would include lasagna, pizza, cheese, and other food that includes animal products.  This will seem scary as a new vegan but you will get used to it quickly.</p>
<p style="text-align: justify;">The list of foods which you are unable to keeps growing but there are also many foods that vegans are able to eat.  There are now tons of vegan safe foods available to the general public that help vegans expand their food options from a list that used to be very small.  Some things like eating out can be very difficult, maybe even impossible at certain restaurants.  Even when eating out you need to be aware of what you are eating and make sure that it coincides with your vegan diet whether you are out grocery shopping or eating at a restaurant.</p>
<h4>Vegan Foods &#8211; Take your time</h4>
<p style="text-align: justify;">Often it will take additional effort to select the types of food you can eat but the rewards are worth the trouble that you will have to go through.  With these difficulties a vegan lifestyle is not for everyone but it is not impossible if you really want to.  After time sustaining a vegan life style and diet will become second nature to you and you won&#8217;t think twice when reading labels to see what foods to avoid or not to avoid.  Remember that it does take a good bit of effort when getting started but once you get used to it, it will well be worth the effort of living a natural vegan lifestyle. <p>Take a pan, first heat olive oil then pop mustard seeds, mix in the onion slices, pepper slices and the red hot chili peppers(sliced).  After you stir fry for 30 seconds it will be time to spread the hash browns, put a lid on and let it cook on low to medium flame for two minutes.  At this point add your salt and pepper then recover and cook for another 2 minutes.  Flip the hash browns in sections and let the other side cook until golden.  Of course, best served hot.</p>
<p>In a wide pan, heat olive oil, pop mustard seeds, add red hot chile pepper pieces, followed by onion slices and thin pepper slices. Stir fry for 30 seconds, spread the hash browns over and cover tight cooking on low to medium flame for a couple of minutes. Sprinkle salt with a shaker, cover and cook until done another 2 minutes. Turn over in small sections and brown the other side until golden. Serve hot.</p>
